Christmas Themed Cake Class

This Saturday I taught my Christmas themed beginners guide to cake decorating. In The Clubhouse, a room full of lovely ladies who all took home a beautifully decorated, christmas themed cake.

We spent the morning modelling cute penguins and creating snowflakes and personalised messages in the students chosen colours. Then the afternoon consisted of splitting our cake and filling it with tasty vanilla buttercream and raspberry jam, then covering it in a smooth layer of icing. How To Line A Cake Tin

It may seem obvious, but to get a good finish on your decorated cakes, you need a solid foundation to start with. One way to achieve this is to make sure your tin is lined correctly. I get asked what method I use and there are many ways to line your cake tin, but this is the way I do it. Scroll to the bottom to see my video!

I use PME tins that are seamless tins made from professional quality anodised aluminium.

  1. Wrap a sheet of greaseproof paper around your tin, to get an idea of size.
  2. Roll the sheet back up and cut sections 3” long. (Or however deep your cake tin is.)
  3. You can get four 3″ rolls out of your greaseproof sheet.
  4. Get together your tin and 3” roll of greaseproof paper and cake release. You will also need a circle of greaseproof paper the same size as your tin, either by drawing around your tin and cutting it out, or by buying pre cut circles, which is what I do, I like these from Iced Jems.
  5. Spray your tin with cake release, home made or shop bought and stick in your circle of greaseproof.
  6. Put your 3” roll into your tin and unroll it around the edge, securing it to the edge.
  7. There you have your lined tin! Fill with mix and bake your tasty cake!

The Beginners Guide to Cake Decorating

The perfect Christmas present for any budding baker & cake decorator.

In this one day course, you will learn a wide range of decorating and modelling skills. This course is perfect for beginners and for those with a little knowledge who are looking to learn some new creative ideas and techniques.

The morning will consist of learning the different types of icing and how to use them. You will learn how to model and cut out sugar decorations to decorate your cake with and also cut out a personalised message.

In the afternoon, you will learn the best way to split and fill your cake. You will then learn to cover your cake and board to a professional standard, and have time to get creative and decorate.

Everything is provided in the cost of the day including a freshly baked 7” round madeira cake, a box to take your cake home in, and all equipment, modelling tools and ingredients. All you need to bring is an apron, a notepad and pen should you wish to take notes and a packed lunch.

Cake International Birmingham & Cake Masters Magazine Awards 2014

This weekend saw Cake International at the NEC in Birmingham. The biggest sugar craft, cake decorating and baking show around. Artists from all over the world submit their cakes to the famous competitions and the hall is filled with stands of suppliers. It simply is the place to be if you are a cake decorator.

This year, it also played host to the Cake Masters Awards 2014 where I was lucky enough to be a finalist for Personality of the Year! I was so honoured to be recognised by my peers and I feel so very proud. I sadly didn’t win but all the winners were very well deserved and I’d like to say a massive congratulations to them all, every one of the finalists and all nominees too!

M&S Christmas Press Show 2014

In a swanky club in London on a warm Autumn evening, Christmas trees twinkling with baubles, fairy lights draped over tables and a fully stocked cocktail bar, the festive season has well and truly started for everyone in this room.

They had many amazing products that I am so excited to see on the shelves in the coming months. Including Christmas soup, white chocolate yeti gingerbread men, a 5 gold rings chocolate cake and some adorable ornaments and decorations.

Bucks fizz flavoured with cranberry, pomegranate and clementine, Christmas cake liqueur and chocolate vodka are a few things that will be working their way into my home this festive season.

There was also a chocolate sharing box perfect for christmas eve or those dark, cold evenings catching up with the family.

The light up words are one of my favourite decorations on show, and I loved the copper and silver stag tea light holders. Gorgeous!
