Banana Bread

Shopping List

  • 2 ripe bananas
  • 75g unsalted butter/Stork
  • 175g plain flour
  • 125g caster sugar
  • ½ tsp bicarbonate of soda
  • ½ tsp baking powder
  • 1 medium egg
  • 1 tsp vanilla
  • 80g chopped chocolate/chocolate chips

We’ve all had bananas that we’ve forgotten about and left them to go spotty and then full on black sitting on the side.

This recipe makes use of them, adding in a chopped chocolate bar for extra sweetness. Feel free to omit the chocolate, change it up for chips or white/dark chocolate, you can even add 50g of walnuts, pecans, whatever you like. This recipe is easily adaptable and easy to bake.

Mash up two bananas.

Like so.

Cream the caster sugar and unsalted butter/Stork.

Add in the mashed bananas and gently mix.

Add in the egg and mix again.

Add in the plain flour, bicarbonate of soda and baking powder and blend until a thick mixture has formed.

Fold in the chocolate (and nuts if you’re adding them).

Spoon into a lined and greased loaf tin and bake at 140C  (fan assisted) for 45-50 minutes or until a skewer comes out clean.

Once cooled, a tasty optional extra by drizzling on melted chocolate.

Cut into slices and enjoy! Make sure to either wrap the loaf well or put it in an airtight box and it’ll last 4-5 days in a cool dry room.
