Blackberry and Apple Mini Loaves

Shopping List

  • Blackberries (roughly 200g)
  • Mini loaf cases.
  • 2 eggs.
  • 1 small apple.
  • 1 orange.
  • 250g self raising flour.
  • 175g unsalted butter.
  • 175g light muscavado sugar.
  • 2 tsp cinnamon.
  • 2 tablespoons demerara sugar.
  • 1tsp baking powder.
Preparation Time:- 20 minutes Cooking Time:- 25 minutes

Autumn. I adore it. And one of the most amazing parts Autumn is the seasonal fruit that’s pretty much on your doorstep! The other night, I went blackberry picking with my lovely friend Ali and her daughter Maisy, who has featured in my blog before!

Put the butter, flour, baking powder, cinnamon and muscavado sugar into a bowl and mix gently.

It should resemble crumbs, like this!

In a separate bowl put the cinnamon, demerara sugar and two tablespoons of the dry crumb mixture and mix. This will be for the topping later!

In yet ANOTHER bowl, gently beat the two eggs.

Grate the apple down to the core and zest and juice the orange.

Add the apple, zest and orange juice to the beaten eggs.

Add the egg and fruit mixture.

Then fold in the blackberries.

Spoon the mixture into the mini loaf cases.

Then sprinkle on the topping we made earlier! Then bake at 170C for 25 minutes.

Tasty and fluffy inside, crunchy on top.

So get out and pick some seasonal fruit and then bake something wonderful!
