These gorgeous breakfast muffins are quick and easy to prepare and are super tasty! Think, an individual fry up. Perfect if you’ve got the family round for brunch, and great for a hangover.

1

Gather together your ingredients!

2

Melt a tablespoon of butter. Then spread a little melted butter into each well of your muffin tin.

3

Flatten your bread a little and use a metal round cookie cutter to cut out circles of bread. Push these into your greased tin.

4

Add a little more melted butter to the tops of the circles of bread.

5

Sprinkle a little grated cheese onto your bread.

6

Fry some bacon, not super crispy, but until it’s done nicely. Dry your bacon out onto kitchen roll.

7

Make a ‘cup’ of bacon on top of the cheese layer.

8

Lastly, crack an egg on top of the bacon. Cook at 180C for 20-25 minutes. They will just pop out of the tin.

9

Enjoy hot! 🙂

Give them a go and as always, let me know how you get on either on FacebookTwitter or Instagram.
