Chocolate Covered Cake Chunks

- Buttercream (half the weight of the cake trimmings)

Hey muffins.
I don’t know about you but in my home there is always bowls of buttercream and cake trimmings filling the fridge. Now, those two things alone are a perfect recipe for cake pops. However, if like me, you were feeling lazy and didn’t have any cake pop sticks, or just fancy something different, then chocolate covered cake chunks are perfect for you.
So, all you need is chocolate, cake trimmings and buttercream!
I happen to have here rich chocolate cake trimmings carved from a recent cake, chocolate buttercream and vanilla buttercream. You need half the amount of buttercream as you have cake. (For example 600g cake with 300g buttercream.)
When the mixture is firmed, you can easily roll it into balls and put on a baking tray lined with greaseproof paper. Then put these in the fridge for a further half an hour.
Side note – It would be at this time you would insert chocolate dipped lolly sticks to make your cake pops!
And use a spoon to completely cover. The great thing about this is that it doesn’t have to be neat at all! So great if the kids want to help out.
These are gorgeous. And a great way of using up any cake trimmings or spare buttercream you have just waiting for a purpose!!
