  • 125g caster sugar
  • 250g self raising flour

Preparation Time:- 10 mins Cooking Time:- 45-50 mins
Complexity:

If you can’t have eggs or dairy, enjoy a vegan lifestyle or even don’t have eggs in, this recipe is great to make and enjoy.

With the option to add in 50g of nuts, or a teaspoon of cinnamon if you fancy it, it lends itself well to change too.

I’ve used melted coconut oil but feel free to use sunflower, olive, whatever you have in.

You can also use plain flour if you don’t have self raising and just up the baking powder to 3 teaspoons rather than 2.

1

Mash the bananas.

2

Add it to a bowl with the caster sugar, oil and vanilla and mix well.

3

Add in the flour, baking powder and bicarbonate of soda and mix.

4

Fold in the dairy free chocolate.

5

Spoon into a lined loaf tin and bake at 140C (fan assisted) for 45-50 minutes or until a skewer comes out clean.

Once cooled, a tasty optional extra by drizzling on melted dairy free chocolate.

Cut into slices and enjoy! Make sure to either wrap the loaf well or put it in an airtight box and it’ll last 4-5 days in a cool dry room.

Give it a try and let me know how you get on either on Facebook or Twitter or Instagram.

Happy baking!
