Gluten Free Choc Chip Cookies

Shopping List

  • 200g coconut flour
  • 1tsp baking powder
  • 125g unsalted butter
  • 125g dark brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 100g dark chocolate chips

Whenever I post a cookie recipe, I get asked if I have any gluten free versions. I have my Peanut Butter Cookie Dough Bites that are gluten and dairy free, but I wanted to make a more traditional cookie!

These beauties are made with coconut flour, giving them a Bounty-type feel! I’ve used Dr Oetker baking powder which is gluten free but remember to check the labels!

These cookies are quite soft and are best eaten on the day or the day after. Keep in an airtight container.

Cream together the butter and dark brown sugar.

Add in the eggs.

Add in the coconut flour and baking powder.

Lastly, add in the chocolate chips.

Wrap the dough in cling film and chill for 30 mins.

Roll in balls and place on a baking tray lined with greaseproof paper.

Chill for another 15 mins and then bake at 180°C for 7 mins.
