Rainbow Cupcakes
Shopping List
- 250g plain flour.
- A pinch of salt.
- 1 tsp of bicarbonate of soda.
- 1 tsb cream of tartar.
- 190g caster sugar.
- 115g unsalted butter.
- 2 large eggs.
- 120ml full fat milk.
- 2 tsp vanilla extract.
Welcome to the She Who Bakes tutorial on how to make these fabulous little rainbow cupcakes!
Finally, add in the milk, one third at a time and the vanilla extract and mix on a high speed for approximately 6-8 minutes.
Then you want to line up six bowls and six colours to represent your rainbow. Divide your cake mixture into your six bowls. (I’ve used the sugarflair colours poppy red, melon, tangerine, party green, ice blue and grape violet.)
Then continue to fill using a teaspoon of different colours going blue, green, yellow, orange and finally red to get your rainbow look. Once you have completely filled your cupcake cases 3/4 full, bang the tin quite hard on the surface a few times to get any air bubbles out and to even out the colour in the cases.
Bake for 20-24 minutes. Keep an eye on the cupcakes to make sure they don’t start to rise too much. Once your cupcakes are baked, take them out of the oven and let them cool in the tin for 5 minutes before taking them out.
