Neapolitan Ice Cream Cupcakes

Shopping List

  • 250g plain flour.
  • A pinch of salt.
  • 2tsp baking powder.
  • 190g caster sugar.
  • 115g unsalted butter.
  • 2 large eggs.
  • 120ml full fat milk.
  • 2 tsp vanilla extract.
Preparation Time:- 30 minutes Cooking Time:- 25-28 minutes

Well between the rain and the wind, we’ve had a few fabulously warm and sunny days, which has prompted the inspiration for these beauties! Bringing the splendour of summer in cake form! AND they won’t melt!

Now, for these, we will be making three different batches of cake mix. Two of them will be using my vanilla cupcake recipe, so we’ll do these first.

Firstly, pre-heat the oven to 120° and cream your butter and sugar and once mixed, add in the eggs one at a time, mixing thoroughly after each one. Then add in the flour, baking powder, salt, milk and vanilla extract.

Once your cake mix is ready, pour it into a piping bag and leave it to one side, we’ll be using this later.

Then you’re going to have deja vu as you’re going to need to do it all again! Then you’ll need some other bits; I’m using Sainsbury’s freeze dried strawberry and strawberry food colouring, and Sugarflair colour pink.

Add in freeze dried strawberry, 1tsp flavouring and a blob of colouring. Then mix thoroughly.

As before, spoon this mix into a piping bag.

Now, onto the chocolate portion!
You will need;
100g plain flour
50g cocoa powder
140g caster sugar
1 1/2tsp baking powder
40g unsalted butter
120ml whole milk
1 egg
1/2 tsp vanilla.

Again, cream the butter and sugar, add the egg. Then add in the flour, cocoa powder, baking powder, milk and vanilla extract. Aaaand, into the piping bag it goes

Then pop some ice cream cone cups into a muffin tray, and prepare your cake mix piping bags. Snip the end off and pipe layered mix into the cups.

I’ve done strawberry, chocolate and then vanilla. Then bake for 25-28 minutes.

Once cooled, top with swirls of buttercream and a flake! I’ve gone for the same flavours of strawberry, chocolate and vanilla!
