Peanut Butter Cookie Dough Bites – Dairy & Gluten Free

  • 1 can of chickpeas (240g drained and dried)
  • 200g smooth peanut butter
  • 100g maple syrup
  • 150g dark/dairy free chocolate chips
  • 1tsp of baking powder

If you’re looking for a lighter treat, this super simple free-from bake is ridiculously tasty!

Here are the facts. These bites contain no flour, dairy or white sugar. Meaning they are gluten-free, dairy-free and on the healthy side!

What they DO contain, however, is chickpeas. Stay with me. I guarantee, hand on heart, these don’t taste “healthy”. And you certainly can’t taste the chickpeas. You’re just going to have to trust me on this one.

I’ve used these Organic 67% Coconut Sugar Chocolate Drops from Real Food Source.

Drain and dry the chickpeas on some kitchen towel. Then put all the ingredients except the chocolate chips into a blender/food processor

Once blended, scoop the mixture into a bowl and stir in the chocolate chips.

Roll into balls and place on a baking tray. Bake at 170C for 10 minutes.

Wait for them to cool slightly before taking them off the tray! Otherwise they completely fall apart. They are best served warm.

That’s it! That’s all you have to do.

10 minutes to make. 10 minutes to bake. 2 minutes to eat.

These bites taste amazing warm, so I suggest if they are left to cool completely, zap them in the microwave for a few seconds to bring them back to life before enjoying! They will last in an airtight box for about 3-4 days.
