Rainbow Pancakes
Shopping List
- 300g self raising flour
- 2 ½ tsp baking powder
- 1 ½ tsp salt
- 100g caster sugar
- 300ml milk
- 2 large free range eggs
- 50g melted butter
Remember, a pancake is for life, not just for Shrove Tuesday. These big and fluffy American style pancakes are perfect ANY day.
Cook them as they are or separate into bowls and colour for a fabulous display sure to put a smile on your face. Serve with a chunk of butter and lashings of maple syrup!
Make sure to use good quality, gel food colouring, for these, I’ve used Sugarflair. (Available from Iced Jems) this way you only need a TINY amount to make a BIG impact. Liquid food colours from supermarkets generally are too watery and won’t give you a great colour.
Then, in a jug measure out your milk and crack in two eggs. Pour in the melted butter and whisk gently with a fork.
Once your batter is divided, colour with the rainbow! (I’ve used Sugarflair concentrated colours in Poppy Red, Tangerine, Melon, Party Green, Ice Blue & Grape Violet.)
I’ve done two pancakes for each colour for a big stack! How many you do, is up to you.
Stack and cover in whatever you like! I’ve used butter and maple syrup!
