Strawberries & Cream Truffles

Shopping List

For the vanilla madeira cake;

  • 200g unsalted butter
  • 200g caster sugar
  • 200g self raising flour
  • 50g plain flour
  • 4 eggs
  • 1tsp vanilla

For the truffles;

  • 400g cake crumbs
  • 200g cream cheese frosting/buttercream
  • 200g white chocolate
  • 200g milk chocolate
  • Freeze dried strawberry pieces
  • Strawberry jam
Preparation Time:- 1 hour Cooking Time:- 45 minutes - for the cake
Complexity:

This recipe is great for any leftover cake (chance would be a fine thing), and leftover buttercream or in this case; cream cheese frosting.  However, if you don’t have any leftovers, I’ve added a recipe to make a quick vanilla madeira cake to the side with instructions here.

These delicious cake truffles are very moreish! You’ll struggle to have just one! Make sure to keep these beauties in the fridge until enjoying.

Bake your vanilla cake in a 10 x 8 tin sprayed liberally with cake release.

For this recipe, I’m using freeze dried strawberry pieces and strawberry jam.

Once your cake is cooled, weigh 400g broken up cake and put in your mixer.

Mix on a high speed to create crumbs.

Then add in 200g of buttercream or cream cheese frosting,

Once blended, add in your freeze dried strawberry pieces.

Then swirl in 2-3 tablespoons strawberry jam.

Roll into balls on a lined baking tray and put in the freezer for half an hour. Once chilled, cover in melted chocolate.

 

Decorate as desired with drizzled chocolate!
