Well, they do say breakfast is the most important meal of the day, so why not have it in muffin?

This easy yet tasty delight is sure to please the morning after the night before. (I’m pretty sure I read somewhere that bacon has been proved to get rid of a hangover…) They are also great to knock up if you’ve had friends over and one fell asleep in the bath

Using a silicone pastry brush, spread a little melted butter into each well.

Flatten your bread a little with a rolling pin and use a metal round cookie cutter to cut out circles of bread. Push these into your greased tin.

Add a little more melted butter to the tops of the circles of bread.

Grate some cheese.

Sprinkle a little grated cheese onto your bread.

Fry some bacon, not super crispy, but until it’s done nicely.

Dry your bacon out onto kitchen roll.

Top your cheese with bacon.

Lastly, crack an egg on top of the bacon. Cook at 180C for 20-25 minutes. They will just pop out of the tin and are best served hot.

Just a little gift from me to you to nurse your hangovers!

Give them a go and as always, let me know how you get on either on Facebook or Twitter.

Happy baking,
