Cinnamon Swirl Biscuits

Shopping List

For the cookies:

  • 125g unsalted butter
  • 125g golden caster sugar
  • 1 medium free range egg
  • 250g plain flour
  • 1 teaspoon cinnamon

For the filling:

  • 200g brown sugar
  • 100g soft unsalted butter
  • 3 teaspoons cinnamon

For the cream cheese frosting:

  • 100g cream cheese
  • 70g unsalted butter
  • 250g icing sugar
  • Splash of milk

It’s Biscuit Week!

This week the Great British Bake Off contestants created biscotti, Arlettes and 3D biscuit boxes. Some looked amazing and sadly come crumbled under the pressure. After watching, I was craving some kind of cinnamon biscuity goodness but without the stress.

So, with that in mind, I bring you Cinnamon Swirl Biscuits. A fool proof biscuit dough flavoured with cinnamon, then given a layer of sweet and spicy cinnamon sugar, topped with a soft cream cheese frosting. All the taste, none of the fuss.

These are perfect with a cup of tea, so get the kettle on, get your apron on and let’s bake!

Firstly, line your baking trays with greaseproof/baking paper.

We’re going to make the biscuit dough first. Cream together the golden caster sugar and unsalted butter.

Next, add in one egg.

Once this is mixed in, add in your plain flour and cinnamon.

Mix this together to form a dough.

Once you have a ball of dough, wrap it in clingfilm and chill in the fridge for half an hour.

While it’s chilling, make the cinnamon sugar.

Mix together your soft unsalted butter, brown sugar and cinnamon to form a paste.

Like so! It doesn’t look much, but I promise you tastes AMAZING!

By now, your dough should be chilled. Roll this out on a floured surface between spacers or to ¼” thick.

Then, spread a generous layer of your cinnamon sugar over the dough.

Cut the end of the dough off to get a straight edge.

Then, roll your dough up. Wrap the roll in cling film and chill for a further 15 minutes. While it is chilling, preheat the your oven to 180C.

Once chilled, use a sharp knife, cut into discs of about ¼” thick. Lay these on your baking tray.

Bake for 15 minutes or until the biscuit is golden brown and the sugar filling is starting to bubble.

Leave your swirl biscuits to cool completely.

For the topping, cream together your butter and cream cheese.

Then add in icing sugar and mix thoroughly. You want it a little soft so it’s easy to drizzle/pipe so add milk a dash at a time.

Put your biscuits on a wire rack.

Mmmm… sexy cream cheese frosting…

Fill a piping bag with your frosting and you’re ready to decorate! You can do swirls, lines, drizzles, it’s up to you!

Leave the topping to set and serve with a nice cuppa.
