Banana, Coconut and Chocolate Flapjacks

Shopping List

  • 250g unsalted butter.
  • 70g treacle.
  • 70g golden syrup.
  • 350g oats.
  • 30g cocoa powder.
  • 3 Fairtrade Sainsbury’s bananas.
  • 100g light muscavado sugar.
  • 100g of white & 100g milk chocolate chips
  • 100g coconut flakes.
Preparation Time:- 20 minutes Cooking Time:- 15-18 minutes

Hello Muffins!

Hope you are well. This week, I’ve gone bananas! (Not for the first time,) An old friend, a long time ago in the future, once said to me ‘Always take a banana to a party, bananas are good!’ and who am I to question a 1200 year old Time Lord?

With Fairtrade Fortnight just around the corner, Sainsbury’s Fairtrade bananas are perfect for this!

Line your baking tin and preheat your oven to 180C.

Add the butter, sugar, golden syrup, treacle and cocoa powder to a saucepan and melt together over a low heat.

Meanwhile, measure out your oats and chop your bananas.

Once your saucepan concoction has melted, pour it over your oats in a bowl and add your bananas.

Mix and add the coconut.

Mix again and add the chocolate chips.

Push this down firmly in your lined tray.

Add some coconut flakes.

Bake for 15-18 minutes or until the coconut starts to brown.

Drizzle with some melted white chocolate and leave to set.

Cut into squares, and enjoy!
