Caramel Cookies

Shopping List

  • 125g brown sugar
  • 125g golden caster sugar
  • 150g softened unsalted butter
  • 2 eggs
  • 1 tsp vanilla
  • 275g self raising flour
  • 120g Cadbury caramel nibbles
  • Chocolate chips (optional)
Preparation Time:- 10 minutes Cooking Time:- 15 minutes

These gorgeous Millies-style caramel cookies are quick and easy to bake. Melt in the mouth and fab with a cuppa, perfect for if you have friends over.

Preheat your oven to 180C.

Cream together the butter and the sugars.

Add the eggs one at a time.

Add in the flour and vanilla.

For this recipe, I’m using Cadbury caramel nibbles. But experiment with other chocolates! I’d love to see what you create.

I’ve also added in chocolate chips because, why not.

Mix this all together and chill your dough for 20 minutes.

Roll your dough into balls and bake for 8-10 minutes.

Soft and chewy. Gorgeous! I love these fresh from the oven when the caramel is still all melting.
