Cinnamon Nutella Muffins

Shopping List

  • 100g soft unsalted butter.
  • 100g golden caster sugar.
  • 120ml milk.
  • 2 eggs.
  • 1tsp vanilla.
  • 250g plain flour.
  • 1 1/2tsp baking powder.
  • 2tsps cinnamon.
  • Nutella.

Hope the summer has treated you well! By now everyone has manifested themselves into two camps. Those who are holding on for each last drop of sunshine and those of us (like me) who cannot wait for the leaves to change colour. I am definitely an Autumn girl.

And one of the things I love about Autumn is the smells in the air. Cinnamon is such a festive scent and I adore when my kitchen is filled with it. That said, these muffins have a light and soft dough complimented by the sweet Nutella and spicy cinnamon.

Preheat the oven to 200°c.

Cream the butter and sugar together.

Add in the eggs, vanilla and milk and combine.

Finally add the plain flour, baking powder and cinnamon.

Line a muffin tray with cases.

Put in a tablespoon of batter into each of the cases, then top with a spoon of Nutella, then cover with another spoon of batter.

Bake for 15 minutes and then leave to cool.

Once the muffins have cooled, melt two tablespoons of butter. Have ready some cinnamon sugar. I’m using Sainsbury’s Taste The Difference cinnamon infused sugar.

Dip the top of the muffins in the melted butter and then swirl around in the cinnamon sugar.
