Coconut Ice Hearts

  • 397g can condensed milk
  • 380g icing sugar
  • 380g desiccated coconut
  • Pink food colouring
  • Heart sprinkles

These cute coconut ice hearts are bites of deliciousness. Coconut ice has been a firm favourite of mine from days gone by of visiting the seaside when I was a little girl.

I have cut them into hearts using a small heart butter but you can also cut them into cubes, slices or whatever you like!

I’ve also topped mine with small heart sprinkles to give them a lovely Valentine’s feel! You can buy these sprinkles from  Iced Jems.

This recipe makes about 20 hearts or 30 cubes and will last 3 weeks.

Line a 10 x 8 tin with greaseproof paper that comes over the sides.

Mix together the icing sugar and condensed milk.

Add in the desiccated coconut. Combine until you have a stiff mixture.

Split this mixture in half.

To one half, add pink food colouring. I’m using Sugarflair Baby Pink.

Mix until you have a nice even colour.

Push the pink mixture into your lined tin.

Then press the white mixture on top.

Top with sprinkles.

Using a clean sheet of greaseproof paper, press down the sprinkles into the coconut ice. Chill for 2-3 hours until set.

Peel the slab carefully out of the greaseproof paper.

If you want nice coconut ice cubes, cut into squares now. Alternatively, grab a small heart cutter.

Press down firmly into the coconut ice and pull out the heart.

And there you have a cute coconut ice heart!

Put them in cellophane bags and give your sweet a sweet treat this Valentine’s Day!
