Lemon & White Chocolate Muffins

- 100g unsalted butter
- 100g caster sugar
- 120ml whole milk
- 2 eggs
- 1 tsp lemon extract
- 2 tablespoons lemon curd
- 250g plain flour
- 1 ½ teaspoons baking powder
- 150g white chocolate chips
Recently, I partnered with AEG to create some delicious recipes in one of their awesome SteamBake ovens! This muffin recipe brings together two of my favourite flavours, lemon and white chocolate. They are light and fluffy on the inside with a slight crust on the outside. Delicious!
I created these Lemon & White Chocolate Muffins as well as a Baked Raspberry Cheesecake and a Sundried Tomato & Parmesan Loaf! I’ve been using my oven for about a month now but this was my first time trying out the SteamBake function. I’m pleased to report it was super easy to use. Just pour the water into the well, select the SteamBake function and let it work its magic!

This recipe makes 12 and once baked they will last in an air-tight container for 4-5 days.
