Lemon and White Chocolate Slices
Shopping List
- 170g white chocolate
- 85g unsalted butter
- 170g caster sugar
- 250g plain flour
- 2 eggs
- 2 lemons
- 1tsp lemon extract
To decorate;
- Icing sugar
- Sprinkles
Hello muffins.
I hope January is treating you well. As I type this, I can hear wind and rain outside the windows. I cast my mind back to a better time, a sunnier time. These bright lemon and white chocolate slices have a delicate flavour sure to take you forward to Spring. Lemon is my favourite flavour in dessert. It’s light and refreshing and these slices are no exception.
They are a cross between a brownie and a tray bake and have a gooey, fudgy middle. You’ll find it hard to have just one!
Preheat the oven to 170C. Melt together butter and white chocolate in a glass bowl either over a pan of hot water or in the microwave.
Mix in the caster sugar. Then add in your lemon juice from two squeezed lemons and the teaspoon of lemon extract. Mix well.
Pour your mixture into a prepared baking tray. I’ve used a 10×8 and sprayed liberally with cake release.
These taste like fondant fancies. LOVE. Get the kettle on.
