Mini Egg Rocky Road

  • 300g Cadbury Mini Eggs
  • 600g milk chocolate
  • 180g mini marshmallows
  • 300g Digestives

I’m sure, by now, you can’t get away from the barrage of chocolate bunnies, Creme Eggs and of course, big chocolate eggs in all the supermarkets. But it seems the humble Mini Egg has been forgotten about in all of the furore, so I have taken it upon myself to champion the fabulous Mini Egg.

This rocky road recipe is quick and easy. Four ingredients, no baking, easy to make and easier to eat!

Firstly, melt the chocolate. This can be done in the microwave or over a Bain-marie.

Put the Digestives into a large bowl and smash them up! I used the end of a rolling pin. You want to keep large pieces for extra crunch so don’t go too mad at this point!

Add in the marshmallows…

And one pack of the Mini Eggs.

Pour over the melted chocolate and mix throughly. Push this into a lined 10 x 8 baking tin.

Top with the other pack of Mini Eggs. Leave to set in the fridge for 1-2 hours.

Cut into squares and enjoy!
