Unicorn Pancakes

Shopping List

  • 150g self raising flour
  • 1 teaspoon baking powder
  • 2 tablespoons caster sugar
  • 150ml milk
  • 2 eggs
  • 50g melted butter
  • 1 teaspoon vanilla

I personally believe every part of every day should be magical, so sprinkle some happiness over breakfast this Pancake Day (or any day for that matter!) with these pastel coloured, fluffy Unicorn Pancakes!

I’m using a fluffy American pancake style mix for these but it would work equally well with a crepe style or waffle style recipe.

Once made these are best enjoyed hot so if they have been left to cool, pop them in the microwave first.

Mix together the dry ingredients.

Whisk together the milk, eggs, vanilla and melted butter.

Like so!

Combine the dry and wet ingredients until smooth.

Split the mix into three bowls.

Colour as desired. I’m using Sugarflair Aqua, Baby Pink and Grape Violet.

Heat butter in a pan.

Cook for a few minutes each side.

Stack and top with whatever you like! I’ve gone for icing sugar, sprinkles and maple syrup! Mmmmmm!!
