Complexity:

There’s something delicious and comforting about warm cheese scones smothered in butter. I had a real craving for these the other day and considering I’ve now been a vegetarian since 2018, I adapted my Cheese & Bacon Scones recipe into Mini Cheese Scones!

Delicious with marmite too, if you like that sort of thing! (Which I do! Haha!)

This recipe makes about 20 mini cheese scones.

1

Crumb together the butter and flour, salt and baking powder using your hands or a stand mixer with a dough hook attachment.

2

It should resemble breadcrumbs.

3

Pour in the milk 1/3 at a time, mixing well between each addition.

4

Add in your grated cheese and mix well to form a dough.

5

Pat the dough out on a floured surface and cut out small circles.

6

Put these circles on a baking tray lined with greaseproof paper.

7

Paint the tops with milk and bake at 190C (fan assisted) for 15-20 minutes or until golden brown on top.
